Cookingclassy.com’s Chicken Tortilla Soup is a great recipe you need to try. You need 1 tbsp of canola oil, 1 1/2 cups of chopped yellow onion, 1 tbsp of finely minced garlic, 1 jalapeño, seeded and chopped, 1 (32 oz) carton of low-sodium chicken broth, 1 tsp of each chili powder, cumin, and paprika, salt and freshly ground black pepper, 1 1/4 lbs of boneless skinless chicken breasts, 1 (15 oz) can of diced tomatoes with green chilies, 1 1/3 cups of milk, 1/3 cup of masa harina, 1 (15 oz) can of black beans, drained and rinsed, 1 (15 oz) can of pinto beans, drained and rinsed, 1 cup of frozen corn, 2/3 cups of heavy cream, and 1/4 cup of sour cream.

Heat your canola oil in a large pot on medium heat, and add your onion and jalapeño when hot. After 3 minutes, add your garlic, chicken broth, chili powder, cumin, paprika and season with salt and pepper to taste. Add your chicken breasts and bring the mixture to a boil. Reduce the heat to medium, cover pot and boil until your chicken for about 15 minutes.

Remove your chicken, and add diced tomatoes with green chilies to the pot. Then, whisk together milk and masa harina in a separate container until it’s blended. Pour the mixture into the pot and cook until it boils and thickens. Dice your chicken and put it back into the pot. Add black beans, pinto beans and corn. Stir in the cream and sour cream, and cook until heated through. Serve warm topped with cheese, sour cream, avocados, cilantro, limes and tortilla chips!
